I started off thawing my shrimp. Mine was frozen so I placed it in a collider and ran cold water over it for about 5 minutes. You can also let it thaw the night before in the fridge. Once it is thawed I removed the tails.
I started boiling my pot of water and a shallow pan of water. Waiting for that to come to a boil, I cut my cherry tomatoes in half and cut up my asparagus.
As soon as the water was ready I added my pasta (I chose rigatoni) to the pot and asparagus to the pan. I added a lid and let the asparagus steam for about 10-15 minutes. You just want to make sure it is bright green and tender.
When the asparagus was all done I turned off the heat and tossed in my shrimp to the same pan. I did this to just warm them up a bit.
I got a large bowl and mixed the pasta, tomatoes, shrimp, and asparagus. I slowly added and mixed in the delicious goddess dressing. I finished by topping it off with feta cheese with pepper.
Amazing!! One of my new favorite dishes! I used some left over noodles to make the boys their own version without tomatoes and shrimp. This meal also serves well the following day for lunch đ
